In recent years, Vienna’s bar segment has seen a sustained boom – the new additions range from classic American bars to hip concepts. The scene in the capital is known for its hospitality, shaped by outstanding quality and – like the city itself – reveals a picture of diversity. And the latest crop of fresh arrivals shows why: Treehaus, an aesthetically arresting cocktail joint, has a real walnut tree growing out of the bar, with flowers and leaves adding the finishing touches. Here, design rides high on the list of priorities. As reflected in the dark parquet flooring which contrasts beautifully with the light marble, while velvet upholstery and brass create a feel-good ambience. Fitzcarraldo, a tucked-away speakeasy with echoes of Prohibition-era USA, is accessed via a vending machine on Neubaugasse. Inside, a world of art deco furnishings opens up, while bold wallpaper featuring jungle plants provides a visual link to the bar's name. Legendary German actor Klaus Kinski was out on the road in the deepest Peruvian jungle in his starring role as Fitzcarraldo... And the drinks served here are every bit as eccentric as Fitzcarraldo himself. One option dubbed Easy Spice gives off steam, the likes of which hasn’t been seen since the heyday of molecular cuisine, and some of the other drinks come with things like edible “soap bubbles” and clouds.

Sputnik – anything but a Russian flagbearer, as made abundantly clear by a peace symbol in the Ukrainian national colors positioned right at the entrance – is a reference to the satellite launched in 1957. The bar’s aesthetic has old spaceship vibes coupled with the style of a period American diner. Spacey barstools, illuminated tables and tons of stainless steel evoke the dawn of the space age. The cocktails revolve around vodka, which stars as the central spirit here.

New Hotel Restaurants

In Vienna, new hotel openings mean new restaurants for everyone to enjoy, too. Neue Hoheit (new highness) is the name of the restaurant in the luxury Rosewood Vienna hotel, which has been elevating brasserie dining in the city to new levels since August 2022. The brasserie, including rooftop bar, offers a panoramic view of Vienna’s historic old town – with the dome of St. Peter's Church right at eye level. Brasserie classics, Austrian specialties and seafood dishes are all on the menu at Neue Hoheit.

Located on Vienna’s showpiece Ringstrasse boulevard, new luxury boutique hotel The Amauris will open in late 2022 on the site of its predecessor The Ring. Here, too, the focus is on stylish fine dining in the hotel's own restaurant, Glasswing, where chef Alexandru Simon takes Viennese cuisine as his primary source of inspiration. Right next door, Glasswing Bar & Bistro is the place for coffee, small dishes or a cocktail.

Also on the Ringstrasse is new boutique hotel O11 (named for its address, Opernring 11). Here, too, a former hotel (Das Opernring this time round) was completely refurbished and remodeled. The culinary line served by hotel restaurant Hayakan has a distinctly Asian touch and forms part of an overall concept geared towards sleeping, eating and celebrating all under one roof. Heidi, the nightclub in the basement of the building, is a mixture of champagne discotheque and Alpine chalet. Planned opening of the Hayakan restaurant in spring 2023.

magdas Hotel – Austria's first social business hotelwas founded in 2015. It employs former refugees, teaches them a trade and helps them establish a foothold in Vienna. Originally located in the second district, magdas Hotel Vienna City relocated to the third district in October 2022. Here, a former seminary dating back to the 1960s was transformed into a unique hotel with a close eye on conserving resources. At magdas, it’s  vintage, recycling and upcycling that sets the tone. magdas Lokal mirrors the style of the hotel, offering international dishes and an exceptional breakfast featuring organic ingredients (brunch is available until 3pm on weekends and holidays).

Under New Ownership

It’s not just all change in the city’s hotels – its hospitality industry is constantly evolving, too. Walter Bauer, operator of one of Vienna's longest-established Michelin-star-winning restaurants, has hung up his apron and handed over stewardship of the restaurant that bore his name to a successor. Top German chef Marcus Duchardt took over on October 1, 2022, serving up fine Austrian-French cuisine, and will continue to run it as Duchardt.

Das Spittelberg was also the subject of a recent takeover. Now top chef Max Stiegl has taken up the reins, but is now running the seventh-district eatery under the name Stanko + Tito. A name he selected in honor of two gay donkeys who live together in the grounds of a boutique hotel on the island of Brač (Stanko and Tito are popular donkey names throughout the Balkans). Food-wise, Max Stiegl lets his Slovenian roots shine. The front section of the restaurant has a classic Balkan grill with cevapcici, while the back area revolves around traditional Balkan dishes, which Stiegl puts his own inimitable spin on.

From Praterstrasse to Praterstern

There is also a lot happening on Praterstrasse – all the way up to Praterstern. Goldener Papagei is a mix of a modern third-wave-coffee-culture-inspired café and an aperitivo bar, where fantastic small dishes provide a culinary highlight. In fact, Goldener Papagei is the latest in a succession of great eateries to open on Praterstrasse in recent years, helping the street establish itself as a popular destination for foodies.

Located a little further down Praterstrasse, Praterwirt, a new restaurant with its very own butchers has chosen an ingenious path. Here, the operators are all about promoting a more conscious approach to eating meat – moving away from factory farming and towards only selecting domestically reared livestock of the very highest quality. Meat from selected producers is available from the in-house master butchers, who also prepare the cuts before they are served in the adjacent restaurant. All in the style of Viennese cuisine – from spleen soup to beef specialties such as Altwiener Backfleisch. And the Praterwirt is the first establishment anywhere in Austria to offer non-pasteurized beer. Its Budweiser, which comes directly from the Czech Republic, is stored on site in special tanks ready for tapping.

Organic and Sustainable

Strictly vegetarian eatery Pure am Praterstern moved into a former police station as part of the wider redevelopment of the Praterstern area. Designed by Viennese architects KENH, the new veggie specialist has all the culinary angles covered, from breakfast and healthy lunches all the way through to after-work drinks. The products are 100% organic and vegetarian, with a clear focus on locally-sourced ingredients.

Traditional Viennese bakery Ströck has been successfully operating Ströck Feierabend in the third district since 2014. And now another Feierabend restaurant has followed suit in the seventh district. Ströck Feierabend on Burggasse flies the flag for sustainability, serving up culinary delights made from regional and organic products – a number of which come directly from the company's own kitchen garden in Aspern, out in the 22nd district. Magnificent vaulted ceilings provide the backdrop for the new Ströck Feierabend, which has taken up residence on the site of a former hardware store. The restaurant in the seventh district is focused on breakfast and lunch.

Originally scheduled for summer, the grand opening of C.O.P. by the Molcho restaurateur family (famous in the city for their NENI restaurants) has been put back until the end of November 2022. Short for “Collection of Produce”, C.O.P. is a joint project dreamt up by Haya Molcho and head chef Elihay Berliner. At C.O.P., the culinary space is shaped by a farm-to-table approach. Low-transport, locally-sourced produce is the driving force – alongside the stories of the people who grow and supply it.

Parliamentary Provisions and Vienna’s First Food Hall

On January 12, 2023, the completely renovated parliament building on Vienna's Ringstrasse will finally be called to order once again, in the wake of a refurb project spanning several years. Following its rebirth, the Parliament will serve up numerous opportunities for visitors to participate in parliamentary life. And one part of that is new restaurant Kelsen in the newly-reclaimed roof space. Named after the man who drafted the Austrian Federal Constitution (Hans Kelsen), it is also open to non-politicians for lunch and dinner. The focus is on sustainable Austrian cuisine. A bistro (open all day, with cocktails available in the evenings) and a self-service cantina for lunch provide an alternative to the main restaurant. Several outdoor terraces open up previously unseen views of central Vienna.

In a former tram depot in the 12th district, Vienna's first covered market will open in March 2023 under the name Gleisgarten. Cooks will show off their skills at various venues, and a café, brewery and cocktail bar are all planned – under one roof. Numerous events will add even more color, from live music to jazz brunches to exhibitions.
